COWBOY POTATOES 
5 med. potatoes, peeled & quartered
5 slices bacon
1 onion, chopped
4 lg. eggs
1 c. Colby cheese, grated
1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. black pepper
6 flour tortillas
Picante salsa

Heat 2/3 cup cooking oil in cast iron skillet. Add potatoes, salt, garlic and pepper. Cook on medium heat until tender. Add 1/2 chopped onion to potatoes. Cook bacon until crisp. Beat the eggs in a bowl and then crumble the bacon into the eggs. Pour egg mixture over simmering potatoes. Turn and stir until eggs are of desired consistency. Top with grated cheese. Spoon directly from skillet into tortilla and add salsa.
