GRAMMA ROSS' APPLE CAKE WITH RUM
SAUCE
 
4 cups diced apples, not too fine
2 cups sugar
1/2 cup vegetable oil
1 cup nuts
2 eggs, well beaten
2 tsp. vanilla
2 cups all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

Mix together apples, sugar, oil, nuts, eggs, and vanilla. In a separate bowl, mix together dry ingredients (flour, baking soda, cinnamon and salt). Add flour mixture to mixing bowl (wet mixture) and mix on low for 1 minute.

Pour into 13x9-inch pan and bake for 1 hour at 350°F.

Allow to cool, and top with Rum Sauce (family favorite) or Brown Sugar Icing.

RUM SAUCE:

1/2 cup (1 stick) butter
1/2 cup evaporated milk
1/2 to 1 cup sugar
1 tsp. vanilla
1 tsp. rum flavoring (real rum is best)

Microwave butter, milk and sugar 2-3 minutes until sugar is dissolved. Add vanilla and rum flavoring. Serve over apple cake.

BROWN SUGAR ICING:

1/2 cup milk
1/2 cup brown sugar
1 1/2 tbsp. all-purpose flour
1 tsp. vanilla

Mix and cook until thickened and drizzle over apple cake.
