TACO IN THE ROUND 
1 lg. can refried beans
2 or 3 avocados (peeled and mashed)
1 c. sour cream
1 1/2 lbs. ground beef, turkey or pork
1 packet taco seasoning
1 head lettuce (shredded)
6 oz. Monterey Jack cheese (shredded)
6 oz. Cheddar cheese (shredded)
1 c. chopped tomatoes
1 can chopped olives
1 bag round chips

Cook the refried beans and spread evenly in the bottom of a large platter. Mash together the avocados and mix with the sour cream. (Instead of avocados you can use 1 container of avocado dip). Spread avocado-sour cream mixture over the beans.

Brown meat and drain. Add taco seasoning and follow packet directions. When meat is done spread it over avocado-sour cream mixture. (You can be preparing the meat while the beans are cooking to save time.)

Spread lettuce over meat, sprinkle Jack cheese over the lettuce and Cheddar cheese over Jack cheese, tomatoes over the Cheddar cheese and top with the olives. Over-lap the chips as you spread them all around the outside of the casserole, sticking each chip into the bottom of the casserole about 1/4 inch. This should be eaten with the chips like a dip.
