CREOLE BLACK - EYED PEAS | |
1 lb. black-eye peas 2 tbsp. bacon grease 2 onions, chopped 1 1/2 tsp. garlic, hopped 1 lb. ham seasoning, cut small 1/2 tsp. thyme 1/2 tsp. sage 1/2 tsp. marjoram 8 c. water 2 tbsp. fresh parsley, chopped 1 bunch green onions, chopped 1 tsp. salt 1/2 tsp. white pepper 4 dashes Tabasco sauce Saute onions in bacon grease until tender. Add garlic and ham and saute for 5 minutes. Add thyme, sage, marjoram, peas, and water. Cover and cook for one hour. Add parsley and green onions. Cook for 30 minutes. Add salt, pepper, and hot sauce. Cook additional 15 minutes. Serve over rice. |
