GRANDMOTHER'S OATMEAL-COCONUT
COOKIES
 
1 c. shortening
1 c. each sugar, packed brown sugar
2 eggs
2 c. sifted flour
1 tsp. each baking powder, soda
1/2 tsp. salt
1 tsp. vanilla extract
2 c. quick-cooking oats
2 c. coconut

Cream shortening, sugar and brown sugar in mixer bowl until light and fluffy. Blend in eggs. Sift in flour, baking powder, soda and salt; mix well. Stir in vanilla, oats and coconut. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350 degrees for 12 minutes. Remove to wire rack to cool. Yield: 36 cookies.
