CHERRY LIME SALAD 
1 (15 oz.) can pitted sour cherries in water
1/2 c. sugar
Juice of 1 lemon
Red food coloring
1 tbsp. cornstarch
1/2 tsp. almond extract
1 sm. pkg. lime Jello
1/4 c. sugar
1 1/2 c. hot water
Green food coloring
3 oz. cream cheese
1 c. whipping cream, whipped

Bring cherries (with water packing), sugar, lemon juice and red food coloring to a boil. Drain, saving juice. Cool juice. When juice is cooled down, add cornstarch and almond extract. Cook until thick and clear. Refrigerate.

Mix lime Jello, sugar, and water. Add green food coloring. Chill until thickened.

Beat softened cream cheese into thickened Jello mixture. Fold in whipped cream and drained cherries. Pour into Jello mold. To serve, unmold on rimmed plate. Pour sauce over Jello mixture.

NOTE: This has become our family holiday salad, by the children's request. It is particularly pretty at Christmas because of the colors.
