CHILI - CHEESE POTATOES | |
3 med. baking potatoes, unpeeled and cut into 1/2 inch slices 1 tbsp. vegetable oil 2 tbsp. minced fresh parsley 1 tsp. chili powder 1/2 tsp. salt 1/4 tsp. pepper 1 c. shredded Cheddar cheese 1 sm. green onion, chopped Combine potatoes and oil in a 12 x 8 x 2 inch baking dish; toss well. Sprinkle potatoes with parsley, chili powder, salt, and pepper. Cover tightly with heavy duty plastic. Fold back a small corner of wrap to allow steam to escape. Microwave at high 9 to 10 minutes or until tender, stirring gently every 3 minutes. Sprinkle potatoes with cheese and onion. Let stand, covered, 5 minutes. Yield: 4 servings. |
