SOUTHERN FRIED CHICKEN | |
1 (3 1/2 to 4 lb.) chicken fryer, cut up Salt and pepper to taste Garlic powder to taste 3 c. all-purpose flour 1 egg, well beaten 2 c. low fat milk Puritan Oil Works best in an electric skillet, however a regular stove and heavy skillet will work. Place one inch of oil in skillet and heat to 340 degrees F. Remove skin from chicken parts. Coat each piece with salt, pepper and garlic powder. Using two large bowls, place flour in one and beaten egg and milk in the other. Dip chicken pieces first in flour, then in egg-milk mixture, then into flour again. Place each piece of chicken into skillet of hot oil. Brown and fry until done. You can make doo-dads with excess dough from your fingers by dropping it into hot oil between chicken pieces and frying until golden brown. |
