BOONE TAVERN'S SOUTHERN FRIED
CHICKEN
 
1 fryer, cut in serving pieces, skinned
1/2 c. pancake mix
Salt and pepper to taste
1 egg, beaten
2 tbsp. milk
Deep fat for frying

Steam chicken in colander over boiling water (covered) for 20 minutes. Mix salt and pepper into pancake mix. Beat egg and milk together. Dip chicken in egg mixture, and roll in pancake mix until well coated. Heat fat and deep fry chicken until golden brown.
