CAROLINE'S SOUTHERN FRIED
CHICKEN
 
1 fryer (about 3 lbs.), cut up
Sea salt
Paprika
Herbamare or Spike (Health food seasoning)
2 c. vegetable oil

Season chicken well and set aside for 1 hour to let seasonings penetrate the chicken. Heat oil to very hot and fry the chicken 12 to 15 minutes on each side. Keep lid on to prevent splattering and help chicken cook faster.

Serves 2 to 3.
