YELLOW SQUASH SOUFFLE 
2 lbs. fresh yellow squash, sliced (approximately 2 1/2 c. cooked and mashed)
1/2 lb. American cheese, cubed
4 slices white bread, broken into sm. bits
2 eggs, slightly beaten
Salt and pepper to taste
1/4 c. butter

Preheat oven to 350 degrees. Grease casserole. In a small amount of water cook squash approximately 10 minutes. Mash cooked squash and blend in cheese. Add remaining ingredients. Place in greased casserole and bake at 350 degrees for 30 minutes. Serve immediately.
