"EASTER ONLY" CREAMED EGGS 
1 green pepper
1 bunch green onions
1/2 lb. mushrooms
1 pkg. dried beef
2 per person hard-boiled eggs
2 cans cream of mushroom soup
3 tbsp. butter

Chop first 5 ingredients. Saute in butter, peppers, onions and mushrooms until soft. Add chopped beef, eggs and soup. Simmer until warm. DO NOT COVER. Serve over English muffins. Excellent brunch. Very colorful!
