CREAMED EGGS WITH HAM 
3 tbsp. butter
3 tbsp. all-purpose flour
1/2 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. pepper
2 1/4 c. milk
1 c. fully cooked smoked ham, diced
4 hard-cooked eggs, each cut into fourths

Heat butter in 2 quart saucepan over low heat until melted. Stir in flour, mustard, salt and pepper. Cook over low heat, stirring constantly. Boil and stir 1 minute. Gently stir in ham and eggs. Heat through. Yield 5 servings.
