VEGETABLE BEEF SOUP 
1 pkg. stew beef (lean meat), cut in sm. pieces
1 lg. onion
2 lg. carrots
1 med. green pepper (optional)
1 lg. potato
1 can stewed tomatoes
1 pkg. dry French onion soup (optional)

Dice all vegetables. Put potato in bowl and cover with water until ready to add. Brown the beef in a pan, cover with water and bring to a boil (if you like a lot of broth, add more water). Set heat back and let meat cook until starts to get tender (about 1 hour). Add carrots and onions. Let cook until starts to get tender (about 20 minutes). Add tomatoes and pepper. Add potato last, cooking until the potato is done.

If more flavor is needed for the broth, add 1 package of dry French onion soup. Let soup simmer on very low heat a bit before serving. Season to taste.
