SALMON PATTIES 
1 can Honey Boy salmon (2 c. size)
10 crackers (Zesta)
1 med. dill pickle
1 med. onion
1 lg. egg
1/4 c. flour
1/4 c. cornmeal
1/2 tsp. black pepper
1/4 tsp. salt
1 c. cooking oil

Put salmon in large bowl. Crush crackers with hands over this, then add finely chopped dill pickle, onion and egg. Mix well. Add flour, meal, pepper and salt. Mix with hands. Have oil hot in skillet.

Pat out into patties about 2 inch in diameter and 1/2 inch thick. Cook until golden brown on one side. Turn and cook on other side until golden brown. Drain on paper towel. Eat while hot.

Hi Mommakay,

I usually dip patties into an egg wash, add seasoning to the bread crumbs or panko or crushed crackers (or a mixture of bread crumbs and flour) and press the patties into the crumbs.
