SALMON PATTIES | |
1 can pink salmon (15 1/2 oz.) 1 egg 1/4 c. corn meal 2 tbsp. flour 1 1/2 tsp. baking powder 1 1/2 c. Crisco 2 tbsp. salmon juice Drain salmon; set aside 2 tablespoons juice in a cup. In a medium mixing bowl, mix salmon and egg until sticky. Sift in flour and corn meal. Add baking powder to salmon juice. Mix. Then stir into salmon mixture. Form into small patties and fry in a large skillet until golden brown (about 5 minutes) in medium hot Crisco. Drain on paper towel. |
