SCALLOPS PARISIENNE 
1 1/2 lb. scallops or shrimp (or both!)
1 1/2 c. white wine
1/2 tsp. salt
1/4 tsp. pepper
3 tbsp. butter
2 tbsp. flour
1 c. milk
1/4 c. sliced mushrooms
2 tbsp. grated cheese (Swiss or cheddar)

In large saucepan combine scallops (or shrimp), wine, salt and pepper. Bring slowly to a boil, then simmer for 5 minutes. Drain and save liquid.

Heat 2 tablespoons butter in saucepan. Add flour and slowly stir in liquid and milk. Cook for 3 minutes, stirring constantly. Add scallops and mushrooms. Cook 5 minutes, stirring occasionally. Remove from heat and stir in cheese. Mix well. Serve over rice or linguini. Enjoy!
