FRIED RICE | |
1 c. uncooked rice (cook as you like) 1/2 lb. bacon (cook well & crumble) 1/2 lb. ham (cut into sm. chunks) 1/2 lb. smoked sausage (sliced & fried & drained) 1/2 c. chopped celery 1/2 c. chopped onion 2 eggs Soy sauce Peas, optional Cook rice and set aside to cool. Best if you cook a day ahead. Fry bacon and drain. Pour off most of bacon grease. Saute onion and celery. Remove from pan. Cook sausage and ham in pan and remove to bowl with onion and celery. Make sure there is enough grease in pan, at least 3 tablespoons. Place rice in pan and toss well to separate grains. Stir in a little soy sauce and fry for about 2 minutes. Then add all of the meat, onion and celery, including the bacon. Stir well. Eggs should be fork stirred then poured all over the top of the rice. Cover and turn down heat and let the eggs steam for a few minutes, then stir well and make sure the eggs are done. Add a few cooked peas for color. These are optional. Serves 3-4. Serve with snow peas or alone! |
