BROCCOLI - CHEESE SOUP | |
1 1/2 c. broccoli 1/2 c. onion, chopped 1 bay leaf 1 1/2 c. milk 2 1/2 tbsp. flour 1 1/2 c. chicken broth 1/2 tsp. salt 1/4 tsp. pepper 1/2 tsp. Worcestershire sauce 1 1/2 c. Velveeta cheese, grated or Cheddar cheese Wash and then steam broccoli approximately 8 minutes. Saute onion and bay leaf until onion is clear. Discard bay leaf. Heat milk and thicken with flour. Add chicken broth and seasonings. Add broccoli and onion, then half the grated cheese. Cook 3 to 5 minutes. Transfer to individual ramekin or oven casserole. Top with remaining cheese. Heat in medium oven just until cheese melts. Serves 4. |
