CREAM OF BROCCOLI CHEESE SOUP 
2 lg. bunches fresh broccoli
4 c. chicken broth (canned broth)

Clean broccoli. Cut up broccoli and cook in the chicken broth for 10-12 minutes. After broccoli is cooked, take out some flower pieces and set aside to add to soup later. Now take out the rest of the broccoli pieces and 1/2 cup liquid and blend them in a blender until pieces are pureed. After preparing the white sauce, add pureed broccoli back into chicken stock. Add; set aside flower pieces and white sauce, stirring well. Heat to desired temperature and serve. If you like lots of cheese, grate extra to add to soup with it's served. Serves 8.

WHITE SAUCE:

1/2 c. butter
1/2 c. flour
1/2 tsp. salt
4 c. milk
1 1/2 c. Cheddar cheese, grated

Melt butter. Add flour and salt, mixing together to make a paste. Gradually add milk. Stir over low heat until the sauce thickens. Add grated cheese and stir until it's completely melted.
