SPINACH CHEESE BALLS 
6 eggs
2 (10 oz.) pkg. frozen spinach, thaw, drain, squeeze dry, dry, dry
2 c. herbed stuffing mix
1 lg. grated onion
1 c. grated Parmesan cheese
3/4 c. softened butter

Blend ingredients well. Roll into balls. Bake at 350 degrees for 20 minutes. To make ahead bake 10 minutes and freeze. Then thaw and bake remaining 10 minutes.
