COWBOY CHICKEN 
4 c. poached chicken, shredded
2 (7 oz.) cans green chili salsa
1 (7 oz.) can mild green chilies, chopped
1 c. milk
2 c. Monterey Jack cheese, shredded
1 can black beans, drained
1 tsp. onion
Black olives
Tortilla chips
1 tsp. cumin

Combine chicken, salsa, chilies, 1 cup cheese, beans and cumin. Cover bottom of casserole with tortilla chips then spread chicken mixture on top. Pour milk on top and garnish with olives. Bake for 25 minutes in 350 degree oven.
