CURRIED CHICKEN SALAD 
12 oz. broiled or poached chicken breast
1 crisp apple, chunked
4 ribs celery, chopped
4 tbsp. curried mayonnaise
Lettuce leaves

DRESSING:

1 c. lo-cal mayonnaise
2 tsp. curry powder
1 tsp. lo-cal apricot preserves
Juice of 1/2 lemon

Slice chicken breast into strips. Toss with apple, celery, and mayonnaise. Serve on lettuce leaves.

DRESSING: Combine ingredients. Stir to mix thoroughly. Use in curried chicken salad or as a dip.
