SPINACH CASSEROLE 
3/4 c. brown rice
3 c. spinach
1 egg, beaten
1/4 c. onion, chopped
1/4 c. grated Sharp Cheddar cheese

Cook brown rice, (1 1/2 cups cooked). Wash and chop 3 cups spinach. Mix 1 beaten egg, 1/4 cup chopped onion, 1/4 cup grated Sharp Cheddar cheese. Put egg mixture into rice. Stir. Then add spinach. Put in 2 quart buttered casserole dish. Put buttered croutons on top. Bake covered at 375 degrees 30 minutes.
