PLANTATION FRUIT CAKE 
1 1/2c. shortening
1 1/2 c. sugar
9 eggs
3 1/3 c. sifted flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2/3 c. orange juice
2 c. raisins
6 slices cut-up pineapple
3/4 c. citron, cut up
1 c. orange peel, cut up
3 c. cherries
3/4 c. lemon peel
3 1/2 c. shredded coconut (fresh)
3 1/2 c. pecans

Heat oven to 270 degrees. Line 2 loaf pans with well greased brown paper. Cream shortening and sugar. Mix eggs in thoroughly. Sift flour, baking powder and salt. Stir into creamed mixture alternately with orange juice. Blend in remaining ingredients into batter. Mix well. Bake 2 1/2 to 3 hours. When cool, wrap in aluminum foil
