SPINACH PIE 
1 (10 oz.) frozen chopped spinach
2 c. lowfat cottage cheese
3/4 c. egg substitute or 3 eggs
3 tbsp. flour
1/4 c. chopped sweet red or green peppers
2 tbsp. chopped onion
4 oz. shredded Monterey Jack cheese

Place drained spinach in bowl. Add cottage cheese, eggs, flour, red pepper, onion and cheese. Stir to combine. Spray 9 inch pie plate with Pam. Turn spinach mixture into pie plate. Microwave uncovered on High for 3 minutes until edges begin to set. Microwave on Medium High 12 minutes or until knife inserted comes out clean. Let stand 5 minutes. Cut into wedges.

Since microwave ovens vary in power, you may need to adjust your cooking time.
