FANCY EGG SCRAMBLE 
1/2 c. butter
2 tbsp. all-purpose flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. shredded Cheddar cheese
1/4 c. chopped onion
8 oz. bulk sausage, cooked, drained and crumbled
12 eggs, beaten
1 (4 oz.) can mushroom pieces, drained
2 c. bread crumbs
1/8 tsp. paprika

Melt 2 tablespoons butter in saucepan. Remove from heat; stir in flour, salt and pepper. Return to heat. Add milk; stir constantly over medium heat until mixture thickens. Add cheese and heat just until melted; remove from heat and set aside.

In large skillet, saute onion in 2 tablespoons butter until tender. Stir in cooked sausage and beaten eggs. Scramble eggs just until set. Fold in mushrooms and cheese sauce. Pour mixture into a greased 9x13 inch casserole.

Melt 4 tablespoons butter. Stir in bread crumbs and paprika. Sprinkle over egg mixture. Cover and refrigerate until ready to bake. Bake, uncovered, at 350 degrees for 30 minutes. 10 servings.
