FANCY EGG SCRAMBLE 
1 c. diced Canadian bacon
1/4 c. chopped green onion
3 tbsp. butter
12 beaten eggs
1 (3 oz.) can mushroom pieces, drained
1 recipe cheese sauce
4 tsp. butter, melted
2 1/4 c. soft bread crumbs
1/8 tsp. paprika

In a large skillet cook bacon and onion in the butter until onion is tender but not brown. Add eggs and scramble just until set. Fold mushrooms and eggs into cheese sauce. Turn into a 12 x 7 inch baking dish. Combine remaining butter, crumbs and paprika; sprinkle on top of eggs. Cover, chill until 30 minutes before serving. Bake uncovered in 350 degree oven for 30 minutes.

CHEESE SAUCE:

Melt 2 tablespoons butter; blend in 2 tablespoons flour, 1/2 teaspoon salt and 1/8 teaspoon pepper. Add 2 cups milk; cook and stir until bubbly. Stir in 1 cup shredded cheese until melted.
