FANCY EGG SCRAMBLE 
1 c. diced ham or Canadian bacon
1/4 c. chopped onion
3 tbsp. butter
12 beaten eggs
3 oz. can mushrooms, drained
4 tsp. melted butter
1/8 tsp. paprika
2 1/4 c. soft bread crumbs

For cheese sauce, melt 2 tablespoons butter, blend in 2 tablespoons flour, 1/2 teaspoon salt, 1/8 teaspoon pepper and 2 cups milk. Cook slowly until thick. Stir in 1 cup shredded cheese.

In large skillet, cook ham and onion in 3 tablespoons butter until tender, but not brown. Add eggs, scramble until just set. Fold in mushrooms. Add egg mix to cheese sauce, folding in, NOT mixing. Turn into 12 x 7 x 2 inch baking dish. Combine remaining butter, crumbs and paprika. Sprinkle on top. Cover, chill 30 minutes or overnight. Bake 350 degrees 30 minutes uncovered.
