POTATO PELMENI/VARENIKI 
1 package wonton skins
6 medium sized Yukon or red potatoes boiled and mashed with skins left on
1 onion chopped and sauté in butter until golden brown
1/4 lb. of mushrooms coarsely chopped and sauté in butter until soft
fresh chopped dill to taste (optional)
salt and pepper to taste

Boil and mash potatoes, sauté onions and mushrooms. Mix the cooked potatoes, onions and mushrooms and season with dill, salt and pepper. Put a spoonful of the potato mixture into the center of a wonton skin. Fold in half and crimp the edges. To help make the edges stick together, may want to mix water and a bit of corn or potato starch brush the edges before crimping. Bring a large pot of salted water to a low boil. Add the Vareniki and cook for a few minutes until the skins are cooked and the filling is hot through. Can be served plain or with a combination of melted butter, sour cream, dill or broth.
