TOMATO - CROWNED COD 
1 1/2 lbs. cod fillets
2 tbsp. lemon juice
1/8 tsp. freshly ground black pepper
1/2 med. green pepper, finely chopped
2 tbsp. chopped onion
1/4 c. dry bread crumbs
1/2 tsp. dried basil, crumbled, or 1 tbsp. chopped fresh basil
1 tbsp. oil

Place fish in an oiled baking dish. Season it with lemon juice and pepper. Place the tomato slices on the fish and sprinkle the fillets with the green pepper and onion.

In a small bowl, combine the bread crumbs, basil, and oil. Spread the crumb mixture evenly over the tomatoes. Bake the fish, uncovered, in a preheated 350 degree oven for 25 minutes. Yield 4-6 servings.
