TOMATO - CROWNED COD 
3/4 lb. cod or other fillets
1 tbsp. lemon juice
Salt & pepper
1 tomato, sliced
1/2 green pepper, chopped
1-2 c. sliced mushrooms
1 tbsp. chopped onion
1/4 c. dry bread crumbs
1/2 tsp. dried basil
1 tbsp. oil

Put the fish in a baking dish in a single layer. Sprinkle with the lemon juice, salt and pepper. Cover with the vegetables. Mix together the last 3 ingredients and sprinkle on top. Bake uncovered for 25 minutes at 350 degrees. Serves 2.
