SAUERKRAUT SURPRISE CAKE 
2/3 c. butter
1 1/2 c. sugar
3 eggs
1 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 c. water

Cream butter and sugar. Beat in eggs, one at a time. Add vanilla. Sift dry ingredients together and add to creamed mixture with 1 cup water. Add 2/3 cup of rinsed and drained chopped sauerkraut (fold in). Turn into 2 greased and floured cake pans.

MOCHA FROSTING:

1 1/2 c. heavy cream
2 tsp. cocoa
3 tbsp. sugar
1 tbsp. instant coffee
1 tsp. rum or 1/2 tsp. rum extract

Whip heavy cream. Add cocoa, sugar, coffee, and rum. Beat all together until soft peaks form and holds its shape.
