MAINE SCALLOPS 
2 lbs. scallops
1 roll Ritz crackers
1 stick butter, melted
1 jigger cooking sherry
Heavy cream

Crush the crackers and mix with the melted butter. Roll scallops in the cracker mixture.

Combine the cooking sherry and enough heavy cream to make 1 cup. Arrange scallops in broiler pan (without the rack) or on a deep cookie sheet or cake pan. Pour cream mixture around scallops to 1/4 inch from bottom. (Don't drown them.) Cook in 325 degree oven for 20 minutes or until top is golden brown.
