HAMBURG RELISH 
1 lg. ripe tomato, cored, seeded, and chopped fine
2 tbsp. minced sweet pickle
2 tbsp. minced yellow onion
2 tbsp. minced sweet red pepper
1 clove garlic, minced
1 tbsp. cider vinegar
1 tsp. sugar
1/2 tsp. celery seeds
1/2 tsp. dijon or spicy brown mustard

Place all the ingredients in a medium size glass bowl and mix well. Cover and let stand at room temperature at least 30 minutes before serving. Or chill in refrigerator overnight. Stir well and serve on hamburgers or as an accompaniment to meats. Store, tightly covered, in the refrigerator for up to 1 week. Makes about 1 1/4 cups.
