COCONUT APPLE CRISP 
4 med. size apples, pared, cored & thinly sliced
1/4 c. sugar
1/2 tsp. ground cinnamon
1/2 c. chopped walnuts (opt.)
1/3 c. butter
1/3 c. sugar
1 egg
1 tsp. vanilla
1/2 c. flaked coconut
1/2 c. sifted all purpose flour

Heat oven to 375 degrees. Place apple slices in shallow 1 quart dish. Sprinkle evenly with 1/2 cup sugar, cinnamon, cinnamon and walnuts. Cream butter and 1/3 cup sugar in small bowl. Add egg, vanilla and coconut; mix thoroughly. Stir in flour gently. Spread batter evenly over apples. Bake 35 minutes or until crust is crisp and golden. Makes 6 to 8 servings.
