SQUASH FRITTERS 
1 1/2 c. cooked yellow squash and onion
1 egg, beaten
1/2 c. sifted self-rising flour
1/2 tsp. pepper
1 tbsp. plain flour
1/4 tsp. salt

Combine squash and onion mixture with salt and pepper. Add egg. Combine in sifted dry ingredients. Mix well. Drop by spoonful onto hot greased skillet. Cook until golden brown.
