“QUICK AND EASY PEACH COBBLER” IS IN:

QUICK AND EASY PEACH COBBLER 
1 cup all-purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 cup (1 stick) butter
3/4 to 1 cup milk
1 lg. can sliced peaches
1 tsp. cinnamon (optional)
3 tbsp. sugar (optional)

Melt butter in a 2 quart casserole dish in 375°F oven while combining flour, sugar, and baking powder. Add milk to the dry ingredients and stir until blended.

Method 1:

Pour the batter into the melted butter; dribble peach juice into the mixture and add peaches. Sprinkle top with cinnamon and sugar.

Bake 30 to 40 minutes at 375°F.

Method 2:

Arrange peaches and juice in melted butter. Drizzle batter back and forth over fruit.

Bake 30 to 45 minutes or until golden brown.

In addition to the peaches, I scatter around a small container of fresh blueberries, or a small frozen bag of mixed berries. Delicious hot out of the oven with a scoop of vanilla frozen yogurt.

I make this one all the time. Easy and so good with ice cream on top. In the spring I pick dewberries or blackberries, not sure what kind they are. Then make it with the berries and the peaches. Really good.

This recipe is perfection. I have used similar recipes, but not with the results this one gives. I did Method 2, with a couple of exceptions.....after putting the batter over, I then drizzled some of the peach juice over the batter....to help incorporate the flavor into it......I added the sugar and cinnamon on top - AFTER removing the cobbler from the oven. This is so good, you don't even need vanilla ice cream with it......although that would have been yummy!

A very easy recipe and tasted great. I used method #2 and added 1/2 cup pecans to it too, and it tasted very much like the peach and pecan cobbler my grandma use to bake down south. Thanks for the memory! P.S. The kids loved it too.

Use lactose free milk instead of milk and then use margarine and you can get the same deal. Also mix in blueberries. Love it

You can use 3/4 stick of butter with no problem, also use BISQUICK instead of flour. Simmer peaches in its syrup and a little water for 5 minutes to soften texture.
