2 1/2 c. flour 1 tsp. baking soda 1 c. sugar 1/4 tsp. salt 1 tsp. baking powder 1 c. raw cranberries 1 c. chopped dates 1 c. chopped nuts Grated rind of 2 oranges 2 eggs, beaten 3/4 c. oil 1 c. buttermilk 1/2 c. orange juice plus 1/2 cup sugar Mix fruit, nuts and orange rind with dry ingredients. Cream together eggs, buttermilk and oil; add to flour mixture. Mix well. bake at 350 degrees about 1 hour. For glaze, mix together orange juice and sugar; pour slowly over cake. |
