BOB'S PICO DE GALLO | |
10 Roma tomatoes, chopped 1 very large white onion, chopped 1 clump cilantro, chopped 4 or 5 large garlic cloves, finely chopped 2 to 3 jalapeno peppers, finely chopped 1/2 cup red wine vinegar juice from 2 limes Mix all ingredients together in a large bowl and refrigerate for several hours, preferably overnight. Note: Seeds can be left in peppers to spice up the mixture. The red wine vinegar is what makes this recipe work. No salt is needed. Serve with organic blue corn tortilla chips for a healthy, salt free snack! Makes 2 quarts. Submitted by: Bob Molzahn |
