MUM'S COURGETTES 
2 courgettes (zucchini)
1 clove garlic
1 can chopped tomatoes (400g)
1 onion
2 tablespoons olive oil
salt and ground black pepper
heavy or sour cream, to taste

Wash the courgettes and wipe thoroughly. Chop off the ends and slice the remainder into roughly 5mm pieces. Chop the onion and crush the garlic.

Place olive oil into a large frying pan and heat. Add the courgettes, onions and garlic and fry for about 5 minutes. Add the chopped tomatoes and salt and pepper to taste and simmer until the courgettes and onion are soft.

When ready to serve, add a little cream whilst stirring vigorously. Best served as a vegetable with a roast beef and Yorkshire pudding dinner, but could be used as a side dish also.

You can experiment with the dish by cutting the courgettes thicker depending on if you like them crunchy or soft.
