EILEEN'S SCALLOPED POTATOES 
5 large potatoes
1 medium onion, chopped
1 tbsp. butter
2 cups milk
1/4 cup all-purpose flour
1 cup shredded pepper jack cheese
salt and pepper, to taste

Preheat oven to 350°F.

Wash, peel and thinly slice potatoes. Sauté onion in butter. Heat milk in saucepan (do not boil).

In a casserole dish layer potatoes, a light sprinkling of flour, onions and pepper jack cheese. Season with salt and pepper. Pour heated milk over potatoes.

Bake at 350°F for 35 to 40 minutes.
