BEST BLACKEYED PEAS IN THE WORLD 
(Pick out bad peas.) 1 ham hock 1/2 lb. chunk of ham 2 cloves garlic, crushed 1 med. onion, peeled and whole Salt and pepper

Cover peas with water and then some, let soak up all the water (4 or more hours maybe). Add all ingredients. Cook for 6 to 7 hours at very low heat. Stir and add water if needed.
