BEST SPLIT PEA SOUP 
3 c. dry green splits
5 c. water
1 bay leaf
1 tsp. salt
1 c. minced onion
1 c. minced celery
1 sm. thinly sliced potato
2 c. sliced carrots
1/4 c. dry red wine
1/4 tsp. dry mustard
1/4 tsp. thyme
Few drops sesame oil
3 tbsp. vinegar
1 c. chopped tomatoes
1/4 c. chopped parsley
3 cloves crushed garlic

Begin early in day, it needs to simmer all day.

1. Simmer splits, water, bay leaf and salt, covered, 3-4 hours. Remove bay leaf.

2. Saute in oil, onion, garlic, celery, potatoes, carrots. If needed add a little water to seam. When tender, add to soup. Continue simmering.

3. 15 minutes before serving add wine, dry mustard, thyme, sesame oil. Just before serving add vinegar, tomatoes, parsley. Serves 6.
