CITRUS SEAFOOD SALAD | |
20 oz. cod fillet 3 tbsp. olive oil 1/2 c. fresh orange juice 1/2 c. fresh lemon juice 1/4 c. fresh lime juice 1/2 tsp. hot red pepper sauce 1 tbsp. white wine vinegar 1 tsp. salt 1 c. red onion, minced 6 green onions, minced 1 tbsp. minced garlic 1/3 c. finely chopped parsley 1 red onion, thinly sliced into rings Brush 1 tablespoon of oil on cod. Bake on greased baking sheet in 400°F oven for 15 minutes or until fish flakes. Mix all ingredients together except red onions. Mix cod and juice mixture well, then spoon into individual servings and garnish with red onion rings. |
