ITALIAN SQUASH 
1 summer squash, cut in sm. pieces
1 tomato, cut in sm. pieces
1 onion, chopped in sm. pieces, fine
2 tbsp. olive oil
1 tbsp. butter
1 level tsp. each-garlic powder, dried basil & Italian seasoning
Salt & pepper to taste, add while cooking

Place the olive oil and butter in frying pan on low heat. Add the squash, tomato and onion with the seasoning and spices. Cook in the covered fry pan on low heat about 20 minutes or until soft. Serve with Parmesan cheese (optional). Can make more vegetables and add a handful of cooked spaghetti.
