CHOP SUEY CASSEROLE 
1 1/2 lbs. ground beef, save 2 tbsp. grease
1 med. onion, chopped
1 1/2 c. diced celery
2 tbsp. grease, from above
1 can cream of mushroom soup
1 can cream of chicken soup
2 c. water
1/2 c. uncooked rice
4 tbsp. soy sauce
1 (3 oz.) can chow mein or suey vegetables
1 can bean sprouts
1 (5 oz.) chow mein noodles

Saute beef, celery, and onions in drippings. Add remaining ingredients except noodles. Put in a 3 quart casserole. Bake at 350 degrees for 1 hour. Stir frequently. Sprinkle noodles on top and serve.
