TUNA PASTA SALAD 
1 1/2 boxes of Penne Pasta
5 cans light tuna in water (not drained)
6 hard boiled eggs sliced
1/2 cp light vinegar (can use more per taste)
1 onion finely chopped
2-3 stalks celery finely chopped
Light mayonnaise (desired amount)
Parsley
Basil

Cook pasta and let drain. Add tuna and mix (do not drain). Add hard boiled eggs, onion, celery, vinegar, spices and mayonnaise and mix well.

You may find you need to add more mayonnaise or vinegar a few hrs later once they have been soaked up by the pasta.

Here's a tip on cooking pasta or rice: Bring covered pot of water to a boil, add pasta/rice, bring to boil again for 1 minute and turn flame off. The pasta will continue to cook itself and you won't have to have the stove on burning unwanted gas/oil/electric. Trust me, it works!!

In just 20 minutes you'll have wonderful tender pasta/rice. Brown rice tends to need a few minutes more, but once the water is absorbed it should be done.

The longer you leave it to steam the softer the pasta/rice will get as long as the cover is left on. Enjoy!!
