BROCCOLI CUSTARD 
1/4 c. chopped onion
1 tbsp. butter
2 c. cooked sliced broccoli
1 c. cooked rice
1/4 c. freshly grated Parmesan cheese
4 eggs, beaten
1/4 c. milk
Salt and pepper to taste
1/2 c. shredded Mozzarella cheese

Preheat oven to 350 degrees. Cook onion in butter in a small pan until soft; do not brown. Combine the onion with the remaining ingredients and pour into a 4 or 5 cup buttered baking dish. Bake for 40 minutes or until a knife inserted in the center comes out clean. Makes 4 servings.
