SOPAPILLAS | |
1 pkg. active dry yeast 3/4 c. lukewarm water 1 tbsp. oil 2 c. flour 1/2 tsp. baking powder Dissolve yeast in water. Add oil, set aside. Stir together the flour, 1/2 tsp. salt and baking powder in bowl. Add yeast mixture, stirring with fork until moistened. Turn out onto lightly floured surface. Knead gently 15 to 20 strokes until dough forms a ball. Divide dough into 12 portions and shape into balls. Cover and let rest, with balls of dough not touching, for 10 minutes. On lightly floured surface, roll out one ball at a time to a 4 inch circle. Place one circle in deep hot fat. When dough rises to surface immediately spoon hot fat over top until dough puffs. Fry, turning one time, until golden. Drain on a paper towel. To serve, cut off about 1/4 of sopaipilla to expose pocket. |
